Breathing new life into a vintage family farm
We are a couple of Culinary Adventurers and Cow Whisperers who are maintaining the connection between Nature and Agriculture on a vintage family farm in Western New York. We strive to produce high quality specialty beef with breeds that thrive in our unique natural environment and regenerative pasture system. ABOUT SOUTHERN TIER BEEF
We use our herd of cattle not only to produce high quality nutritious beef, but to improve idled pastureland in our local region. Regenerative Agriculture is a system of farming and grazing principles and practices that increases biodiversity, enriches soils, improves watersheds, and enhances ecosystem services. Just by exhibiting natural grazing behavior, our cattle restore land overrun with weeds and bushes, and help to properly drain and irrigate the pasture, while putting nutrients back into the soil.
It is our mission to provide you with high quality specialty beef, that does more than nourish the body, but is also a good fit for our region's agricultural landscape.

LOCAL, REGENERATIVE, and PASTURED
We offer specialty beef available for purchase by the whole, half, or quarter. Meadow veal (raised by the dam) is also available during certain months of the year.
